Barley pottage (“Ash-e-jo” in Persian language) is one of the traditional cuisines of Iran that served in most areas of this country.
This cuisine is one of the local cuisines of “Markazi” province. In the other areas people also cook this cuisine by insignificant changes; So this cuisine have variety taste.
As specified there name the most important constituent matter of this pottage is “Barley”; The other ingredients of this pottage are: Groats, Legume (Beans, Lentil, Pea), Vegetables (Leek, Parsley, coriander).
They also use dried whey, fired onions, fired spearmint to decorate.
